Almost everyone is taught the same rule: stand the board on its tail, and if it reaches somewhere between your chin and your nose, it fits. That rule is a leftover, and for a lot of riders it is wrong by more than a full size. A snowboard is a spring. It is built to bend under a load, and the load is your weight, not your height.

Why weight, not height
A board only works when you can flex it. Press into a turn and the board bends, the edge engages along its length, and it comes back at you out of the turn. That behaviour is engineered around a weight range, which is why every manufacturer publishes one for every model, and why none of them publish a height range.
If you are light for your height, a board picked by the chin rule will be too long and too stiff for you to bend, so it will feel like riding a plank: it will not turn, it will not spring, and you will assume you are the problem. If you are heavy for your height, the opposite happens. The board is overpowered, washes out under you, and feels unstable exactly when you want it solid. Shorter boards swing faster, which is what a park rider wants and what makes a beginner's life easier. Longer boards have more edge in the snow and more surface underfoot, which is what holds a line at speed and keeps you afloat in powder. The plus or minus 3 cm range is real: within it, the board's flex and shape matter more than the number.

Width is the number people forget
Length gets all the attention and width causes all the trouble. Your boots sit across the board, and if your toes or heels hang past the edges, they touch the snow when you lay the board over in a carve. That is toe drag, and it does not feel like a sizing mistake, it feels like the board randomly catching and throwing you.
Boot size decides it. Up to about a US 9.5 a standard width board is fine. From a US 10 you are close enough to the line that you should check the waist width rather than assume. From about a US 11.5 you want a board sold as wide, often marked with a W after the length, with a waist of 256 mm or more. Note that boot outer sizes differ between brands even at the same US size, and reduced-footprint boots buy you a few millimetres.
What the number cannot tell you
Two boards at the same length can ride completely differently, and this is where charts stop being useful. Flex is the big one: a soft park board at 155 and a stiff freeride board at 155 are not comparable machines. Shape matters too, since a directional board with a setback stance floats better than its length suggests, and volume-shifted powder boards are ridden deliberately short and wide.
So use the number here to walk into a shop knowing roughly what you are looking at, then read the manufacturer's own weight range for the specific model, which is the most reliable figure anyone publishes. If you sit at the top of one model's range and the bottom of the next size up, the honest answer is that either will work, and the choice comes down to whether you would rather it turn quickly or hold steady.
